Step 1 Heat a large wide based pan over a medium heat. One hot, turn down a little and slowly fry the onion, garlic and celery until soft (about 6 mins). Then add the red pepper and paprika and fry for another 2 mins before adding the chorizo. Fry for another 10 mins..
Step 2 Meanwhile, in a separate pan, heat 1 tbsp olive oil over a medium heat and add the chicken thighs with salt and Pepper. Step 4 3-4 mins before the end, prepare the prawns by adding a tbsp of olive oil to a pan over a medium high heat. Add 2 cloves crushed garlic and some Seasoning. Then add the prawns and cook on one side for 60-90 secs. Then flip and cook for another 60-90 secs. Turn off the heat..
Step 5 Once the rice is cooked through, add the zest of a lemon and the juice of half. Then place the prawns on top..
